Jalapeno Wine Summer Squash

  • Summer squash, or most any squash
  • Kosher salt
  • Cracked black pepper
  • Mild or Chipotle Jalapeno Wine

Slice summer squash lengthwise for grilling purposes. Sprinkle kosher salt on both sides to draw moisture out, let sit for 1 hour. Pat squash dry. Sprinkle with cracked pepper on one side. Drizzle with Jalapeno Wine. Let marinade for 15-20 minutes. Pat dry. Brush lightly with olive oil, if desired, and grill to your preferred doneness.
