Potter Wine – Dutch Oven Slow Cooked Chicken

  • Whole Chicken
  • 3 celery stalks, chopped
  • 1/2 white onion, diced
  • 1 bulb garlic, cut in half through all cloves (no need to peel the garlic, as it will be used strictly for flavoring)
  • 1 lemon cut part way through about 6 times (to release juices while cooking inside chicken)
  • Kosher salt
  • 2 tsp ground mustard
  • 1 Tbsp dried basil
  • 1 Tbsp dried oregano
  • 1/2 tsp ground thyme
  • 1 bay leaf
  • 1 cup Chipotle Jalapeno Wine

Salt chicken in and out, paying particular attention to the cavity, which you want to season generously. Place lemon in cavity of chicken. Heat Dutch oven on medium heat, add oil. Add onion, garlic and celery. Saute until translucent. Add remaining dry ingredients to chicken (sprinkle on top and sides). Add chicken to pot and pour Chipotle Jalapeno Wine around chicken. Add bay leaf to liquid. Cover and cook in oven at 275 degrees for approximately 2 to 2 1/2 hours or until chicken is very tender.

Once done, take the chicken out of the pot and set on a cutting board. Let the chicken rest for 10-15 minutes, you can tent it with foil or leave uncovered. We have done both. If you’re feeling adventurous, strain the liquid from the pot and reduce it down in a sauce pan to make a nice sauce for the chicken. Once the chicken has rested it should peel apart easily with a fork. Enjoy!
