I bought Trader Joe’s small whole green lentils and decided to make a few changes to the recipe that was printed on the back of the package!
- 1 cup lentils, sorted and rinsed
- 2 cups + maybe a couple teaspoons veggie broth
- 1/4 cup Chipotle Wine
- 1 tsp black pepper
- 1 tsp chipotle powder
Add lentils, broth, wine and seasoning to a sauce pan and bring to a boil. Reduce to low, cover with a lid and simmer until tender and liquid is almost absorbed, about 35 to 40 minutes (I am still experimenting with the perfect cook time..). You can salt to taste if desired, serve as-is, or add any toppings of your choice. Personally, I found it to be full of flavor as it was! I do like a good spice to foods, but this wasn’t anything super overwhelming, either. The Chipotle Wine really complemented the lentils.
